A Moroccan tradition, tagine is traditionally an earthenware pot with a distinctively conical lid. The shape is specific so that when hot steam reaches the top of the dome, it condenses and bastes the meat as it cooks. Ours is made with chicken, honey, cinnamon, crushed tomatoes, and spices. We serve ours with roasted garlic couscous and fresh shredded basil.
